Food Friday: Delicious & Simple Dinner (With Carbs!)

So for the last three weeks my boyfriend and I have been on the South Beach Diet (Phase 1).  This means we consumed very little to no carbs.  Yes, that means no pasta, no fruit, no potatoes and no bread.  It was tough, but we made it through.  Now that have moved onto Phase 2 it is time to start slowly reintroducing carbs back into our diet.  For our first dinner we wanted something that was still healthy but with pasta.  Thus we landed on this delicious and simple dinner!

  • Marinated Chicken Breast
  • Roasted Asparagus
  • Wheat Pasta w/ Sauce & Low Fat Parmesan

The chicken breast was already pre-marinated when we got it (Foster Farms, Herb Marinated).  It took only 15 minutes on the grill.  The pasta is plain wheat pasta, of which we each had 1/2 a cup (the appropriate serving size), and a wee bit of tomato and basil marinara (Classico, from a jar).  The asparagus was washed, lightly coated in extra virgin olive oil, and covered with chopped garlic, then roasted at 400 degrees for 15 minutes. With only 5 minutes to prepare and 15 minutes to cook, dinner was on the table in under 30 minutes.  And it was delicious, especially that chicken (so juicy and perfectly marinated).  And man, it was really great to have some carbs again, even if it was only a little.
